Sev Puri / Sev Batata Puri Recipe
|
Sevi Puri is a tangy, crisp and tongue tickling Indian evening snack.

|
Sev Puri / Sev Batata Puri Recipe Ingredients:
10 - flat crisp Puris
1 cup fine Sev
1/2 cup chopped Onion
1/2 cup boiled Potato
3 tblsp Sweet chutney / Khajur chutney
3 tblsp Green chutney
1 tblsp Chaat Masala
1/2 Teaspoon Red chili pepper
1/2 Teaspoon Cumin Seed
2 – 3 Tablespoon chopped Cilantro for garnishing
For Green chutney -
1/2 bunch Cilantro
6 nos green chillies
1/2 inch piece of ginger
1/2 Teaspoon Cumin seeds
Salt and lemon juice
For the Sweet chutney / Khajur chutney –
2 cups Dates (khajur), deseeded
1/4 cup Tamarind (imli), deseeded
1 cup Jaggery (gur), grated
1 teaspoon Chilli powder
A pinch Asafoetida (hing)
Salt to taste

Sev Puri / Sev Batata Puri Recipe Directions:
To make Green Chutney -
Blend all the above to a fine paste and reserve.
To make Sweet chutney / Khajur chutney
Wash the dates and tamarind and place them in a saucepan. Add the jaggery, chilli powder, asafoetida, salt and 4 cups of water and simmer for 20 to 25 minutes. Cool and strain the mixture through a sieve. Use as required. Store refrigerated.
Serving Sev Puri:
Arrange the puris on a plate make a hole in each puri in the centre. Fill with a few chopped boiled potato cubes. Add about 1/4 tsp of tamarind and green chutneys in each. Sprinkle cumin powder, salt, red chilli powder. Sprinkle finely chopped onions. Then generously sprinkle sev all over the puris. Garnish with finely chopped coriander. Serve fresh
