Sauteed zucchini with a hit of mint makes for a refreshing and low calorie entree

Sauteed Zucchini and Mint Recipe Ingredients:
1 Teaspoon olive oil
2 medium garlic cloves, minced
3 medium zucchini, cut into 1/4 inch rounds
1/4 cup orange juice
1 Tablespoon red wine vinegar
1/4 teaspons kosher salt
1/4 teaspons orange zest, grated
3 Tablespoons mint leaves, chopped

Sauteed Zucchini and Mint Recipe Directions:
In a large skillet, heat the oil.
Sauté the garlic until fragrant, about 30 seconds. Add the zucchini; cook until softened, about 5 minutes.
Stir in the orange juice, vinegar, salt and orange zest; cook until the liquid is slightly thickened but hasn't evaporated, about 2 minutes.
Remove from the heat and stir in the mint. Serve hot or at room temperature
