Paneer Tikka Recipe
|
Soft and juicy chunks of paneer marinated in Tandoori masala make Paneer Tikka is a delicious appetizer recipe.

|
Paneer Tikka Recipe Ingredients:
2 cups paneer, diced (cottage cheese)
1/2 cup red capsicum, chopped
1 onion, diced
1/2 cup thick curds
1 teaspoon ginger-garlic paste
2 teaspoons chili powder
1/2 teaspoon dried fenugreek leaves (kasuri methi)
1/2 teaspoon garam masala
2 tablespoons chopped coriander
1 Teaspoon tandoor masala
1 teaspoon chat masala
1 tablespoon oil
salt
For Tandoor Masala -
100 gms cumin seeds
35 gms coriander seeds
20 gms cloves
5 pieces of 2" cinnamon sticks
20 gms ginger powder
20 gms garlic powder
20 gms red chilli powder
20 gms turmeric powder
20 gms mace powder
20 gms salt
1 Teaspoon orange food coloring (Optional)

Paneer Tikka Recipe Directions:
To Make Tandoor Masala -
Dry roast the cumin, coriander seeds, cloves and cinnamon sticks in a pan on a low flame, till they begin to release their aroma. Remove from fire and allow to cool.
Grind all the ingredients together in a coffee grinder to make a smooth powder.
For Paneer Tikka -
Combine the curds, ginger-garlic paste, chilli powder, kasuri methi, garam masala, coriander, tandoor masala, oil and salt and mix well to prepare a marinade.
Add the paneer, onion and capsicum and keep aside for 15-25 minutes.
Arrange the marinated paneer, capsicum and onion pieces in a shallow glass dish and microwave on HIGH for 3 minutes. Alternatively, you can thread the marinated paneer and onion pieces onto bamboo skewers in a combination of your choice. Preheat your grill on medium.
Put the paneer skewers on it and brush with a little cooking oil. Grill till paneer is light golden and the onions soft. Do not overcook or the paneer will become rubbery.
Sprinkle chaat masala and squeeze lemon. Serve hot with green chutney.
