Goi Du Du Recipe
|
A yummy Goi Du Du recipe for any occasion.

Goi Du Du Recipe Ingredients:
2 tablespoons dry-roasted peanuts (coarsely chopped unsalted)
2 tablespoons sesame seeds (lightly toasted)
2 tablespoons red or green hot chile (minced fresh)
1 tablespoon dried shrimp or dried shrimp powder (finely ground)
3 tablespoons fish sauce
1/4 cup lime juice (freshly squeezed)
1 tablespoon garlic (minced or pressed)
2 teaspoons palm sugar
Fresh mint sprigs (for garnish)
1/2 cup carrot (peeled and shredded)
1/2 cup red sweet pepper (thinly slivered)
1/2 cup ripe tomato (peeled, seeded, drained, and chopped)
1/4 cup fresh cilantro (coarsely chopped)
1/4 cup fresh mint (coarsely chopped)
3 cups green (unripe) papaya (peeled, seeded, shredded)
3 tablespoons green onion (minced, including green tops)

Goi Du Du Recipe Directions:
To make the dressing, in a large bowl, combine the lime juice, fish sauce, and sugar and stir to dissolve the sugar. Stir in the garlic and chile until well mixed. Add the papaya, carrot, sweet pepper, mint, cilantro, and green onion to the dressing.
Using your hands, gently squeeze the mixture to release the flavors and soften the vegetables. Add the tomato, shrimp powder or ground shrimp, peanuts, and sesame seeds and toss to mix well.
To serve, mound the salad on a serving plate or in a bowl and garnish with mint sprigs.
