Curried Chicken Salad Sandwich Recipe  
 
Curried Chicken Salad Sandwich Recipe Ingredients:

3 Tablespoon curry powder
1 cup fat-free mayonnaise
1/4 cup chutney
1 Teaspoon table salt
1 pound chicken breast, cooked, skinless, cubed
1 medium apple, cored and cubed
1 medium pear, cored and cubed
2 medium celery, stalks, diced
1/4 cup raisins
12 pieces lettuce
12 slices reduced-calorie wheat bread, toasted

 
Curried Chicken Salad Sandwich Recipe Directions:

In a small skillet over low heat, toast curry powder until fragrant.

Combine curry powder, mayonnaise, chutney and salt in a small bowl. In a separate, large bowl, toss chicken, apple, pear, celery and raisins. Add mayonnaise mixture and combine.

Place a piece of lettuce on each of 6 slices of bread, divide chicken salad among them, cover with second piece of bread and serve.
