Bhel Puri Recipe
|
Bhel Puri is a delectable combination of papadis, puffed rice, sev, onions, potatoes, raw mango and chutneys.

|
Bhel Puri Recipe Ingredients:
4 cups Puffed rice
2 cups Sev
1 Onion, finely chopped
2 Tomatoes, finely chopped
1/2 cup finely chopped raw mango .
1/4 cup Carrot, grated
A handful of peanuts
2 Potatoes, boiled, peeled & cubed
6-8 puris, hand crushed
Salt and chaat masala to taste
Green chutney
Sweet chutney / Khajur chutney
2 Tablespoon Cilantro, finely chopped
Puri for garnish
For Green chutney -
1/2 bunch Cilantro
6 nos green chillies
½ inch piece of ginger
½ Teaspoon Cumin seeds
Salt & lemon juice
For the Sweet chutney / Khajur chutney –
2 cups Dates (khajur), deseeded
1/4 cup Tamarind (imli), deseeded
1 cup Jaggery (gur), grated
1 teaspoon Chilli powder
a pinch Asafoetida (hing)
Salt to taste

Bhel Puri Recipe Directions:
To make Green Chutney -
Blend all the above to a fine paste and reserve.
To make Sweet chutney / Khajur chutney
Wash the dates and tamarind and place them in a saucepan. Add the jaggery, chilli powder, asafoetida, salt and 4 cups of water and simmer for 20 to 25 minutes. Cool and strain the mixture through a sieve. Use as required. Store refrigerated.
Serving Bhel Puri -
Mix all the ingredients thoroughly and serve in individual plates. Garnish with sev, cilantro and puri.
