Bap Cai Muoi Xoi Recipe Ingredients:
1 Cabbage, diced
1 tablespoon Salt
1 tablespoon Ginger, crushed
2 cups Vinegar
2 tablespoons Sugar
2 tablespoons Polygonum Leaves (rau ram), finely chopped

Bap Cai Muoi Xoi Recipe Directions:
Take the cabbage and sprinkle with salt and ginger, let it stand for 30 minutes.
Press the excess moisture from the cabbage using a dry towel.
Place the cabbage in a jar. Mix vinegar, sugar and polygonum leaves. Add the mixture to the jar until the cabbage is completely covered.
Set the jar aside. After one day the cabbege will begin to ferment and bubbles will appear. When the bubbles are gone it is ready to eat, around 3 days.
